Recent Eats [8.26.14]

I haven’t done a recent eats post for a solid month! I can promise you that I still ate a lot of the same stand-by foods [i.e. oats, avocado toast, chicken salads, etc.]. If it ain’t broke, don’t fix it, amiright?

Regardless, I’m here to share with you some of the food that’s been making me happy and full.

I’ve been trying to sneak more meatless meals onto my family’s dinner plates as of late. One of the meals we enjoyed was Oh She Glows three bean salad. We had baked potatoes on the side.

I made an AMAZING bowl of chocolate zucchini oats recently. It then appeared in at least one or two breakfasts per week for the last few weeks. All I did was add two tbsp. of dark chocolate cocoa powder to my oats. The coconut on top (and the fruit) balanced out the hint of bitterness of the chocolate… which I liked anyway, since I love dark chocolate.

My brother is a bit of a picky eater, so sometimes I try to keep things simple for him (important: sometimes). I knew that he would love Lexi’s zesty chicken bites, and he definitely did. In fact, I put the seasoning on chicken legs for him recently, too.

One morning I made my own cereal. I’d run out of slivered almonds, which I usually use, so I decided to use sunflower seeds instead. It was a good sub!

This is an example of a time that a pizza crust simultaneously failed but also succeeded. My dad and I were home alone one night, so I made us some pizza (his with pepperoni). I wanted to grill the pizza, but as soon as I put it on the grill it totally broke apart. I made the crust with oat flour, so that’s probably why. I decided to bake it, we ate it with forks, and all was well.

After yoga and before work one morning, I nommed on peach overnight oats topped with almond butter. Peaches and AB are a great combo unless you think you have salmonella tainted almond butter.

I went out to Shady Grove with friends one evening, and look! No salad! We were going to have drinks afterward, and I felt like that wouldn’t be a fabulous combo. I opted for a veggie wrap. It was great! The fries tasted pretty good, too. 😉

Chipotle!!! I had this twice last week because it’s been a crazy month at my part-time job. I also felt lazy and not like making dinner. Hence: this huge bowl of salsa and gauc.

This smoothie was one of the most satisfying breakfasts I’ve made for myself in a while. I haven’t had a chance to make smoothies too often this summer because I haven’t wanted to wake my family, even on weekdays, so I jumped at the chance to make this one twice in a row. It’s so simple: coconut water, almond milk, frozen blueberries, frozen banana, chia seeds, spinach, almond butter and ice. I topped it with Cascadian Farms Honey Nut O’s.

Getting chocolate chip pancakes with my brother at a local joint is one of my favorite things to do. Now we’re limited to weekends, since he’s starting up school. It’s weird this year since it won’t be the one time per few months that I really get to see him – I’m not going anywhere this fall! (Oh, and on that note, yes I’m sad I’m not at OU right now.)

This past weekend, I hung out with Cassie all Saturday. We got manis and pedis, walked around Pittsburgh, and eventually ended up at Il Pizzaiolo, which I’ve been dying to go to. The waiter explained to us that they make their Neapolitan pizzas in an oven that takes like 90 seconds to cook the food through and has rocks from Mount Vesuvius in it.

This combo … it’s just a lot of yes. Sam posted about it last week (and a few other times, too), but I actually remembered to make it this past weekend! Oh. my. god. Dippy egg on top of PB&J oats?! She’s a genius.

My brother, mom and I went to Panera over the weekend before we did a little school shopping. I was hungrier than usual, so I ordered the power chicken hummus bowl and a cup of black bean soup

Foodie Picture Dump [Recent Eats]

So, if you didn’t know this, I’m pretty into all things other-worldly. Last week, I went to a psychic. Maybe that’s not your thing, and that’s totally fine, but I have to say it was so much fun.

Among the several things I learned during my time with the psychic: I should apply to work for Amazon and Google, I’m going to move twice in my life, I’m single because I don’t do anything to look for guys, and I’m going to have two sons in a few years (I have slowly come to terms with the fact that I’m apparently a boy mom now). You might think I’m crazy for semi-believing her, but she also said some more personal family things that were really spot-on. It was far out.

One thing I didn’t talk to the psychic about? What I should eat! Where’s the fun in knowing what you’re going to have for breakfast, lunch, and dinner when you can just follow your cravings? The past two weeks were filled with some really yummy meals. Most of them stemmed from me listening to what my body was telling me to eat, which I’ve been trying to do more often. It’s been interesting. One such meal was this: French toast! For lunch, no less. It was totally one of those “I need French toast right now, so I’m definitely going to make French toast right now” kind of things.

I’m planning on featuring this salad on the blog within the next few weeks. I’ve made it several times now and am convinced it is the ultimate craving buster. As a little teaser, I’ll say that it has a really delicious and healthy roasted garlic dressing.

I recently visited the Amazing Café with Cassie for a vegan, raw dinner. We’ve been meaning to try this little spot since it opened almost half a year ago, and it truly delivered. We both had raw spaghetti bolognese made with zucchini noodles. I think there were cashew crumbles for the ‘meat.’ It was … amazing. Pun intended.

Annnnnnd this has been my go-to nighttime snack. Frozen mango with chocolate chips, almost nightly. I dunno what it is but the texture of mango is so addictive to me. It’s so smooth and almost creamy!

Dad’s birthday dinner! I guess I should wish him a happy belated birthday on the blog. Since it was over a weekend, I didn’t post that day. We celebrated with kebabs, corn and sweet potatoes. YUM. Summer corn is really the best. So sweet, minus the fact that it gets stuck in your teeth.

Obviously we had birthday cake, too. We have a tradition of celebrating with immediate family with a Pepperidge Farm frozen cake. I love how light and airy these cakes are.

Sometimes a simple lunch satisfies. & cantaloupe!! Also wonderful in the summer. Cantaloupe cause I just got married (lol.).

This was my first attempt at curry. I followed this recipe! It was simple and tasty, but it could have been spicier.

This past Friday night I met up with Erin and Cassie at our favorite spot, Shady Grove. I branched out slightly and tried the summer salad. Shrimp, mango salsa, goat cheese, and dried cranberries over greens. We all shared a bottle of wine. It was great to catch up!

Last night’s dinner was so satisfying! I had a baked potato, cauliflower, and grilled chicken. It was such a quick meal to cook, but I really loved it. I put some olive oil on the potato, and it gave it just the right amount of flavor.

An Anniversary Dinner [Recent Eats + Fitness]

Lately I’ve been trying to get my family to eat a little healthier. Sure, I always encouraged them to, but now that I’m home with some extra time on my hands, I’ve been making dinner for them most nights. Mom and Dad have been on board, which I’m truly thankful for… Adam, not so much. I’m still holding out that I’ll eventually get him to eat more than seven baby carrots with his chicken patties.

I’ve been testing out one or two new-to-them and/or -me recipes per week, filling in the rest of the days will other staples. Breakfasts and lunches are still an individual thing, but hopefully I can start to help my mom meal plan her lunches, too. My parents have pretty much loved everything I’ve made for them so far, and, not surprisingly, I source most of my recipes from blogs I read. Yay blogs!

Recent Eats

I’ve tried this one out prior to this week, but The Hummusapien’s Chickpea, Brown Rice and Broccoli Crockpot Casserole has been and continued to be a big hit. I actually added too much water to this batch, so I soaked up the extra liquid by adding some quinoa, too. It’s not pretty, but it’s SO good.

My mom and I munched on these Southwest Quinoa Burgers from Eat Yourself Skinny last night. They were really tasty! I made the whole recipe, but I found that six patties was more reasonable than the recommended eight. My mom agreed – but she also agreed they were delicious and “tasted like chili on a bun.” We used TJ’s whole wheat buns, for the record. Also very good. I topped mine with tomato and ketchup. #ketchupfreak

On Sunday night, my entire family plus extended family on my dad’s side went out to dinner at Bravo! to celebrate my grandparents’ 55th wedding anniversary (!!!!! congrats! I love you both!). The food was pretty good – I ordered the Light Chicken and Vegetable Pasta – but the company was better.

And check out these cookies my grandma got for dessert! Aren’t they the coolest? And talk about a good looking couple. They were actually married on the 4th of July, so that’s why the cookies are outlined in patriotic colors.

As for breakfast, I rocked some pancakes on both Saturday and Sunday morning. The ones pictured here are made with spinach; the pancakes from Saturday were made with zucchini. They essentially looked the same, except the zuke ones completely broke up. Pancake fail. They still tasted amazing. I’ll credit the blueberries and maple syrup for that.

I don’t remember what day I had this breakfast, but those strawberries were seriously on point. I put two over easy eggs atop some spinach and had a banana with Nuttzo on the side.

And then of course I had to have my good old standby of avocado toast with Vegenaise, eggs, and carrots. And those cherries? PHENOMENAL. I could have eaten the entire bag (I know it looks like the entire bag there, but it was maybe 1/4 of it 😉 ).

Recent Fitness

Last week’s workouts included yoga (of course), ellipticalling, a run, and this deck of cards workout.

I actually only made it to yoga once, but it was a 90 minute class I definitely needed before the weekend. I went the morning of the 4th, and it was incredibly crowded. Like an inch between mats crowded. It was a little more stressful of a class than I wanted, but it turned out to be a great sweaty workout despite the strange woman next to me who was staring right into my eyes during one of our final twists on the floor.

And, yes, that does say I went for a run. On Wednesday, I headed down to a trail with my friend to test out the ‘ol knee. Unfortunately, there was still pain even after basically taking the anti-inflammatories for a month. I went to the specialist yesterday, and I’m scheduled to get an MRI to make sure I don’t have any torn ligaments. The doctor wants to be sure before he gives me a cortisone shot, which is the next step if the MRI shows no out-of-the-ordinary ailments. It’s my first MRI, and I’m kind of nervous! I’ve never had to have anything more than an x-ray, knock on wood.
