Wild & Wonderful Family Vacation

You might remember two weeks ago when I took a designated break from the blog and had some wonderful ladies guest post for me. During that time, my family took a little vacay not too far away from home just outside of Weston, WV at the Stonewall Resort.

It was honestly one of my favorite trips my family has ever taken, even though it was more low-key than our usual vacations – just what we needed right now, truthfully. The Stonewall Resort is located right on the Stonewall Jackson lake, and they have some really great deals when you stay there, too. Plus, almost all of their outdoor gear (i.e. kayaks, paddleboards, etc.) is included in your room price. The resort is surrounded by tons of hiking trails, too. I was never bored, to say the least!

The week was filled with lots of activity. I stuck to hiking and lounging by the pool, mostly. One day, my dad and I went on an awesome 5 mile hike that culminated in a super steep incline. We walked Cairns trail; the appeal of the trail was that there were random perfectly stacked rock piles along the route. No one is sure why the cairns are there, but they were supposedly built by Native Americans. My theory is aliens, but whatever. Dad was a great hiking buddy.

My mom and I also spent some time at the resort spa (I got my first massage ever! It was wonderful), and while we did our thang the boys made use of the kayaks! I wanted to go kayaking on the day we were leaving, but unfortunately it was raining.

Of course, I had to make sure to use the paddleboards, since stand up paddleboarding was on my summer bucket list! I discovered that I need a little work on my paddling directions. It was way easier to balance than I expected, and I had a blast.

This trip was a little different for us not only because we didn’t travel as far but also I felt that we were way more active than usual (think a bunch of lazy bums on the beach 😉 ). I had so much fun getting outside and moving with my family – it was exactly what I was craving!

June Brought Great Food [Recent Eats + Fitness]

Happy July! I really can’t believe it’s already the 7th month of the year. I’m ready to start the second half of 2014 with a fresh outlook (and of course, some yummy food!). But before I jump into July, let’s play catchup on what I’ve been eating and doing for fitness!

Food

Breakfasts have looked very similar around these parts, not surprisingly. The funny thing about me is that I need to make sure I’m satisfied by my breakfast or I’m in a bad mood all day. That’s why I usually stick to similar formulas but just switch out fruits or veggies. My staples lately have been avocado toast, and I’ve switched out carrots with tomatoes or blueberries with watermelon.

Lunches? A ton of salads! I’ve discovered that I really love a crunchy something in my salads. Fruit has also been on my salad radar lately, especially since berries are so abundant right now.

Strawberries, mushrooms, carrots, sunflower seeds, and walnuts with balsamic dressing over a (huge) bed of lettuce.

Not surprisingly my most favorite salad made an appearance, too. This one’s going to be around for a while.

I’ve been trying to make more dinners for my family to get them a little more nutrition. Here are just a few of the meals we’ve had as a family!

My family LOVED, and when I say loved I really mean it, PaleOMG’s Almost 5 Ingredient Pizza Spaghetti Pie.

I made some homemade meatballs with pasta another night. I served mine up with a huge serving of broccoli, too. Have you ever had your broccoli with pasta sauce? It’s a really tasty combo.

I really enjoyed this meal: honey mustard drumsticks with a side of brown rice and yellow squash. It was really simple, but I was so satisfied!

Aaaaaand I’ve had several meals out, too.

Thai Green Curry at Nicky’s Thai Kitchen. SO GOOD.

Salmon with veggies and rice at Joe’s Crab Shack (as a whole it was just okay, but the salmon was cooked really nicely).

And finally a rockin’ breakfast with my brother at Cracker Barrel #notsorry. I had their multigrain pancakes with a side of eggs. I didn’t eat the bacon, but Adam did, so I didn’t feel bad about it going to waste. I couldn’t even finish the pancakes! Also can we talk about that huge hunk of butter?

Fitness

So, I know I said I was going to do Fitnessista’s Summer Shape Up, but I didn’t follow through. I loved her Winter Shape Up, but I was not feeling these new workouts. By “not feeling,” I mean I was kind of bored while doing them. I also didn’t like that there weren’t plyo cardio sets or videos to accompany, which is what really drew me to her Winter Shape Up. I have trouble making myself do burpees or those kind of moves, and having a video helped me push through.

Instead, I’ve still been doing a lot of yoga, walking and weights. I’ve also been able to do some HIIT workouts on the treadmill. For some reason, those never bother my knee.

Speaking of the knee, I’m testing it out running a straight distance tomorrow, aiming for three miles, because I’m almost through with my medicine. I get it checked again next week. Wish me luck!

Currently in June

I’ll just be upfront and say that this post’s survey has been done before. I’m aware of it because if these two lovely ladies – Amanda and Sam. Sometimes I feel like I need to update you on aspects of my life outside of food and fitness, and while I do that on Sundays with Arman, those questions aren’t always as relevant to my current life.

So what am I obsessed with currently? Let’s see…

Current [book]:

I just finished The Circle, and now I started reading The Storyteller by Jodi Picoult. So far I’m into it. I think Picoult has a unique way of tying the pieces of her stories together. This particular novel is about a woman, whose parents were Jewish, who happens to unknowingly befriend a former Nazi. If that doesn’t pull you in, I don’t know what will.

Current [music]:

On Tuesday, Cassie and I saw the Arctic Monkeys. I always become more obsessed with music after I hear it live, and even though they were already on repeat for me, I’ve been playing them nonstop anyway. Apparently they brought a “heavier stoner sound” to the show. Wish I knew what that meant.

Chris D’Elia’s new show “Undateable.” NBC at 9pm on Thursdays. So funny.

Current [nail color]:

None. Except a light grey on my toes. I prefer my fingernails unpainted! Is that weird?

Current [drink]:

COCONUT WATER. Always.

Bloobs.

Finding a few job listings that I’m actually qualified for. YAY. Progress.

Goat cheese. I’m fresh out. Nah, jk. Well, I’m really out, but I don’t actually need goat cheese.

In all seriousness, I need world turmoil to calm down. Every day I open my Skimm email and am saddened to see even more unhappy news out of foreign nations.

Current [bane of existence]:

Crow pose. I cannot get into it not matter what I try! Mmmm that’s not totally true. An instructor at yoga the other day had us try to get into it a different way, and it alllllmost worked for me, but not quite.

Current [indulgence]:

These cookies.
