Marvelous Food [MIMM #20]

Is it really weird that ending the year with my twentieth Marvelous in my Monday is really pleasing to me? It has something to do with it being an even number.

Anyway, this weekend was filled with some marvelous food, so of course I am linking up with The Healthy Diva!

I mentioned last week that we were having close family friends over Saturday night for a Christmas celebration. My parents were kind enough to hand the cooking reigns to at my request because I really wanted to try out my new cookbook!


First of all, I have to add in here that butternut squash should seriously come with a disclaimer: “I may cause you to lose your hand when you peel me.” Why are those buggers so stinking hard to peel!?


I decided to make Paltrow’s quinoa with butternut squash, green onions + parsley and chicken francese along with some roasted asparagus and carrots and a salad.




She is my idol. I personally think her dishes turned out wonderfully, and my parents agreed. The quinoa salad was fresh and comforting (yes, food can be fresh and comforting!), and the chicken crisped up perfectly. The only change I made was that I didn’t used gluten-free chicken on the flour but whole wheat instead.


I almost forgot about the appetizers! I made a hummus and veggie tray as well as this recipe for Toasted Almond Parmesan Dip and crackers. Yeah, that dip was amazing – savory, cheesy, with just a hint of sweetness from the almonds.


It was a great evening that ended in cookies! We were so tired that we forgot to get our annual picture.

Last night, we went over my mother’s friend’s house, who she grew up with and who I’ve known forever. She made a lovely dinner for all of us. On my plate I had a kale, strawberry and coconut salad, salmon, green beans, and roasted veggies.


Later I had a piece of cherry pie to cap off the night.

  1. I got that cookbook for Christmas as well, and although I haven’t cracked into it yet, you’re seriously making me want to do so ASAP. The only problem is that I’m having a hard time trying to decide on what to make — so many of the recipes just sound amazing!

  2. That food looks amazing! I about lost my hand when I tried to peel the same squash-it needs a warning label. And a pair of earmuffs for anyone around me so they don’t hear my creative language each time the peeler slips!

  3. I have seen her cookbook around but haven’t looked into it much. The recipe sounds amazing though so I may have to go check it out!

  4. Oh man everything here looks amazing!! And yes I typically buy my butternut squash pre-peeled for the very reason that it is just banana balls to do it at home! Its seriously a workout in itself just to slice and dice that thing!

    1. Hhaha ya she and I are like bffs. Butternuts require a serious knife. I have a super sharp one, too, I got it last year and it works well for butternuts but I don’t take it to school with me because I think my one roommate would lose a hand.
