Wednesday. Or is it Tuesday? I just don’t know with this whole long weekend thing. Wait… what is that I hear? The call of WIAW? Ah yes, It’s definitely Wednesday, but all of these eats are from Tuesday! See how that works out? 🙂
One of my favorite breakfasts in all the land this time with a twist! I love me some dark chocolate PB from PB & Co. And I even threw a little cheap porn in there for ya… #yolkporn that is. Wink.
For lunch I had a big ol’ salad for the #PowerbowlChallenge. It was just okay though, nothing special. I got it from the school cafe and ate it at work, but I ruined it with their gross dressing. Live and learn! At least I got a bunch of good veggies in the form of mixed greens, beets, cabbage, cukes, tomatoes, radishes, broccoli and carrots. Apple on the side!
After class, I was super ready for a snack. Obvi, you can never have too much PB and when I’m on the run, it’s the easiest way to get some protein and healthy fats. I used carrots as my vehicle of choice. Then I ran out the door to hot yoga and a magazine meeting!
I can’t say I was super hungry after my meeting, but clearly, I needed food. I roasted an acorn squash over the weekend, so I ate half of that topped with a heavy handed dollop of Smart Balance and cinnamon. On the side I had coconut water, which I am convinced is the best drink ever. Slightly sweet and good for you? Give me more.
The candle you see there is my new favorite thing because it smells like cookies! It also adds ambiance for a nice romantic evening alone.
