Friday Faves

Good morning, everyone!

Yesterday, I had so. much. fun. Our local school district has a picnic day every year at Kennywood, an amusement park located pretty close to our home. I used to look forward to Kennywood day every year, but for the past few I haven’t been able to make it due to my own school schedule. Happily, I was able to go with my family yesterday!


This is the “laughing lady at Kennywood.” My mom laughs just like her, no lie. It is a very hearty and contagious cackle. We always joke that we could stick her in there for a real life version.


I mostly hung out with my parents. We rode the things like the train. It was nail-biting. ๐Ÿ˜‰ Just kidding, I really did have a great time with them.

Later, our close friends came out to spend the evening at the park. Victoria is my longest friend, and we were essentially made to be friends for life. Our moms are BFFs โ€“ they planned their pregnancies together. Victoria was as goofy as ever. I missed her so much!


I also had some pretty delicious food. The park is famous for their Potato Patch fries. I don’t know what they do to them (douse them in grease perhaps?), but I love them. They are a wonderful treat. I also had ice cream (with rainbow sprinkles, duh) and fudge later. The park makes amazing fudge.



And now for a few Friday faves! Not posting at least a few would just feel weird, even though I already wrote a novel about yesterday.

Favorite Post: I really adored this post:ย “How To Lose Your Mind In 10 Ways” from Charlotte at Commitness to Fitness. Sometimes, we all need a little reminder of the ways we can avoid beating ourselves down. And how could I ignore a nod to one of my favorite chick flicks?


Favorite Recipe: I really am getting into eating lentils as of late. I don’t know why I just discovered them this year, but I want to cook with them more often. Nutritional powerhouses, those little things. ย Chelcie at Chelcie’s Food Files had a pretty great recipe this week: Roasted Vegetable and Lentil Salad. YUM.



Favorite Workout:ย Julie from Peanut Butter Fingers is the queen of circuit workouts, and I just know that this Boot Camp Workout she posted based on a class at her gym will be great. I loved my bootcamp class workouts during the school year, but I could never remember all of the moves we did after class ended. Now I have something to go off of!

I Went There [Recipe]

Guys. You’re going to think I’m nuts (…wait, this space IS called Nutty for Life so that should come as no surprise…).

I went there.

I had been curious for some time, and this morning felt like the perfect opportunity to test my theory.

I put spinach…


in my oatmeal.

And it was GOOD.

I figured that if we all put it in smoothies for some extra greens, why not blend it into my oatmeal? I knew I woudn’t be seeing many veggies today, and I wanted to get in at least some nutrients. I encourage you to try this! You won’t be sorry.


Hidden Spinach Oatmeal

  • 1 1/2 cup water
  • 2 handfuls spinach
  • 1 egg white
  • splash of unsweetened almond milk
  • 1/2 cup oats
  • 2 tsp chia seeds
  • 1/2 banana, sliced thin
  1. Blend water and spinach until no pieces of spinach are left (I used my liquify setting on my blender, and it took maybe 20 seconds).
  2. Heat spinach mixture, almond milk, egg white, and oats in a pot.
  3. Keep stirring occasionally so that the oats do not stick to the bottom.
  4. When the oats boil, add in chia seeds. Stir.
  5. What a few minutes, then whip in sliced bananas. The oats will thicken after you add the bananas, which act as an emulsifier.
  6. Top however you please (strawbs for me, obviously!).
  7. EAT!


I’m sure that these would make great chocolate oats if the green color freaks you out. The banana is essential, in my opinion, to add a little sweetness and help mask any spinach flavor that may have tried to come through.

WIAW #15-Crave Snacking

Every week I tell you that you “just catch me when I have an apple with peanut butter” and that’s why it appears in nearly every What I Ate Wednesday post. WELL. I have finally admitted to myself that, while I really don’t eat that snack every day, I eat it at least five times per week. Is that bad? I don’t really care ๐Ÿ™‚ Maybe I’ll get sick of them sometime soon. Maybe not. Let’s just focus on my eats from yesterday in celebration of the party we all know and love, thanks to the ever sweet Jenn.

The theme for June is sensible snacking. I wouldn’t say I snacked sensibly yesterday… rather, I ate anything I craved. Maybe that kept me sane and sensible? I’ll take it.


I had to wake up pretty early to head to the mall for my retail job. When we do a new floor set, I go in to help out. For some reason I really enjoy laying out the new product! Since I had to go, go, go, I made a chocolate cherry smoothie (and I also took a thermos of coffee). And guess what else? The smoothie was a new recipe! I put the following in the blender: almond milk, water, vanilla Cho, chia seeds, a frozen banana, a bunch of cherries, a handful of spinach cocoa powder, Vega chocolate protein powder and a little honey.



When I got home from work, I was ravenous. This is where the apple and PB comes into play. Quick and delish.



I had a random craving for kale chips, so I whipped up a huge batch with some olive oil (TJ’s for the win) and salt. I now welcome you to Mount Kale Chip.


I also had a chicken breast and salsa. I love Newman’s products, and this salsa definitely satisfied.


Snessert (What we are now calling a snack/dessert)

Dark chocolate M&Ms. Nom nom nom. This handful times a million billion trillion. The brown ones are really ugly, in my opinion.



I experimented with a new recipe last night. It turned out okay but not great. Definitely not blog-worthy yet. I baked some meatless meatballs made from cannelleni beans and ate them alongside spaghetti squash and broccoli. I swear there is spaghetti squash and meatballs under the sauce.



I had some cereal before bed (small bowl x2) just because I felt like it. Fiber One, I think? Strangely I really like Fiber One cereals. I forgot to take a pic though!


Oh, and I haven’t worked out in, like, 4 days. I’m trying to be good to my stitches. Is it weird that every time I sneeze I think that they are going to break and all my guts will fall out? Probably, especially since the cut was not even that deep. Although, I did get way more stitches than I expected. I think my innards are okay for now. ๐Ÿ˜‰
