When I was younger, my Pap-Pap would sometimes make us Russian pancakes. I say sometimes because these were no ordinary pancakes – they were buttery, sugary, surprisingly dense and eggy. They were for special occasions due to their lengthy preparation time and their horrendous nutrition stats. Nonetheless, they were delicious.
I remember him telling us to drench the thin, crepe-like pancakes in butter and syrup, and oh, did we. I would savor every last dripping bite.

I randomly thought of those pancakes yesterday because it was Fat Tuesday, and I had a giant craving for them. I haven’t had them for years! Instead, I celebrated Fat Tuesday with something equally as satisfying: dark chocolate. 😉
Every Tuesday, my roommate and I wake up and immediately head to Bootcamp at our school’s fitness center.
We’ve completely fallen in love with the class because it incorporates a ton of plymoetric and high intensity moves that we both agree would take a lot of motivation to do on our own without the support of a class and instructor behind us.
The hardest move for me in every class is the burpee. They are the bane of my existence, but I’m trying to get better at them! I’ll keep you updated on my progress as the weeks continue 🙂
After Bootcamp, I had green monster smoothie. I think they are so nutritious, and they help to refuel me after a tough workout!
Green Monster Smoothie (Basic Smoothie)
- 2 huge handfuls spinach
- 8 small frozen strawberries
- 1/2 frozen banana
- Almond milk (Enough to get the blender movin’)
- Vanilla Chobani
- 2 Tsbp. chia seeds
- 1 tsp. honey
If you wanted to, you could add some protein powder as well. It depends on the day for me, but I didn’t add any to today’s smoothie.
I was also really excited to try one of my winnings from Hillary’s blog later in the day – Hot Oats from Love Grown Foods! You may have seen giveaways circulating around different blogs for these oats, and I was so happy to win some considering I’d have to buy them online otherwise (and I rarely win anything, so that was also a stroke of luck).
The Peach Almond Vanilla flavor was really tasty, and I can’t wait to try the other flavors.
For dinner, I had a tried and true favorite of mine: Zucchini Boats. It’s basically just roasted zucchini covered in a mixture of garlic, red onion, mushrooms, marinara sauce, and ground turkey, but it always hits the spot.
